Nature as inspiration for the 2019 Coupe du Monde de la Pâtisserie

This 2019, The Coupe du Monde de la Pâtisserie celebrates its 30th anniversary and the best way to commemorate it has been introducing nature; flora and fauna as its main guests.


Gabriel Paillasson, founder of the competition and confectioner of Lyon focuses on the importance on how this event can serve a noble cause in favor of the preservation of the environment by creating awareness and celebrating biodiversity by highlighting the essential role played by bees and pollination. Considering this, teams have to create a chocolate dessert with a cookie made with honey. This test could be possible because of the collaboration with the National Union of French Beekeepers (UNAF) which is committed to the conservation of bees.

This contest focuses its efforts on presenting innovations and latest trends of consumers, so for the first time in the history of the event, the dessert presented on a plate will require the use of products that highlight vegan trends.

Every two years, The Coupe du Monde de la Pâtisserie brings together the best young pastry talents in the world. After a selection process that included more than fifty national rounds and four continental selection events in Africa, Asia, Latin America and Europe, 21 teams have qualified for the final.

The participating countries will be Argentina, Algeria, Australia, Belgium, Brazil, Chile, China, South Korea, Egypt, United States, Italy, Japan, Malaysia, Morocco, Mexico, Poland, United Kingdom, Singapore, Sweden, Taiwan and Tunisia.

In República del Cacao we celebrate all the artists that will participate in this Challenge, in particular the team from La Roja Dulce from Chile where our Chef Partner Gustavo Saez participates. We believe in Latin American talent, in its passion and determination.
