CHEF BRANDY PEREZ CLIENT TRIP EXPERIENCE IN ECUADOR
Chef Brandy Perez, is our spectacular Pastry Chef at the Renaissance Schaumburg Hotel and Convention Center. A sharp patisserie in her work, defined by a magnificent way of creating well combined and recognizable multi flavor desserts that surprises palates with a playful ground of flavors in a each byte.
For someone who gets to be in constant contact with chocolate, getting immersed into the actual environment where cacao is sourced and produced, was a very special experience for her.
This trip made her more appreciative of the chocolate itself. “So much labor and sourcing of ingredients and making a relationship with the farmers goes into making something that’s so readily available to consumers in every store. I think twice about ever buying a candy bar anymore because it really isn’t authentic chocolate” For chef Brandy, what she enjoyed the most was seeing all of the different climates in which every ingredient is grown in and also meeting hard working people that make the chocolate possible. “Ecuador is a truly magical country to be able to provide all the ingredients needed that go into the amazing República del Cacao chocolate”
